The right person will have a sense of urgency, be able to function in a tip pool environment, and can own the bar on a busy night while maintaining a positive attitude. Suitable candidates will have previous knowledge of wine and cocktails; Italian wine and cocktail knowledge will be considered an asset, but not a must. On September 19th, award-winning Nicli Antica Pizzeria and LaStella Winery are co-hosting an evening of fine dining, wine, and music. The evening features LaStella wines inspired by music paired in harmony with the six-course dinner. Each course will take you on a journey, bidding farewell to summer and building to a crescendo with live music featuring Vancouver Symphony Orchestra violinist, Yi Zhou, to enhance your full experience in welcoming fall.

Nicli Pizzeria Presents: House-made Series 3 – Ricotta

At Nicli Antica Pizzeria, we pride ourselves in making a lot of the ingredients we use on our pizzas in-house. This is the beginning of a series of house-made ingredients we specialize in and are extremely proud of.

This week’s feature is: house-made ricotta.

Ricotta.

IMG_2960A creamy texture that melts the moment it hits your mouth. And on pizza? They’re little pockets of cheesy heaven, waiting for you to take a bite out of them. It’s a simple process but patience is required throughout.

Using half & half, buttermilk, and homogenized milk, pour it all into a large pot and let it come to a slight boil, stirring occasionally. Turn off the heat and allow the now clotted cheese to cool slightly. Drain completely.

Nicli Pizzeria Presents: House-Made Series 2 – Peperonata

At Nicli Antica Pizzeria, we believe in making a lot of the ingredients we use on our pizzas in-house. This is the beginning of a series of house made ingredients we specialize in and are proud of.

This week’s feature is: peperonata. The sight of these brightly coloured bell peppers lined up for roasting brings spring to mind.

Now, the peperonata you get with the antipasti or burrata doesn’t come out of a jar. At Nicli Antica Pizzeria, we are serious about ensuring many items are house-made by people in our kitchen. Nicli Antica Pizzeria puts its own twist on the traditional Italian peperonata recipe, serving it alongside antipasti and…wait for it…burrata.

We start with a tray of bell peppers sliced in half with the insides taken out (we keep the tops on to act as a shield so the inside doesn’t burn when you roast them).

After roasting them for about an hour, our staff takes out the trays and lays them trays of roasted peppersout to cool a little before peeling them by hand. The aroma of the roasted bell peppers is incredible – it fills the kitchen with a certain type of sweetness.

Once all the roasted peppers are peeled, they’re sliced and placed into a bowl to strain out any remaining juices. 

Once the peppers are strained, we cook red onions, sugar, white wine vinegar, garlic, olive oil, salt, and pepper juice together until it makes a nice thick base. We reduce it down and add the sliced roasted peppers in.

Once the pot of peppers has been reduced down, we take it off the stove and chill before serving it with antipasti or burrata (when it comes in).

This week’s feature is: house-smoked bacon.

Even saying the word ‘bacon’ brings the sound and scent of sizzling meat to mind. What can we say—bacon brings many ingredients together in beautiful harmony. And when it’s on a pizza, the results are nothing but out of this world.

Our fresh pork belly comes from Sloping Hill Farm (with Happy Island Pigs), a local farm in Qualicum Beach, BC that raises their animals in green pastures.

Nicli Pizzeria wants to ensure quality products are brought in, and as local whenever possible, to enhance the flavour experience for anyone that comes to our pizzeria.

After soaking the cherry- and apple-scented chips in water, we put the wet chips at the bottom of the smoker, to make sure the fresh pork bellies would absorb all the flavouring.

The process is simple but it takes time and patience to bring our customers the delicious smoky flavour of bacon on pizza (or even as a side for brunch).

Several hours roll by and we open the smoker door to reveal this. Even the whiff of smoke curling out from the door’s release brought the scent of tiniest hint of cherry and apple mixed in.

After letting the newly smoked pork belly rest in the cooler, we sliced it up into thin pieces, ready to top your favourite pizza.
